It's been a minute since JAM Hot Chicken moved into its cute little corner in Winter Park, bringing this charming corner of New England Avenue closer and JAM Hot Chicken, a popular hot chicken restaurant in Winter Park, has been a hit in Orlando since its opening in 2005. The restaurant has been featured on the cover of Hot Chicken Day, with chef/owner Andrew Scala partnering with Orlando pizzaiolos, Lazy Moon, for a one-night collaboration on March 29 at their Mills 50 location at 1011 E. Colonial Drive in Orlando. Other notable spots include The What, which only makes 200 pies and start selling at 5pm, include whipped ricotta with jot dip, fries, JAM Hot mild chicken, vinny slaw, pickles and comeback sauce. Hot chicken fans can also find traditional Nashville hot love at Bubbakoo's, where shredded chicken meets the fiery essence of ghost peppers. While the hot chicken bao is considered an Asian twist on the Nashville Hot Chicken and Hen&Hog's three-day brined fried chicken thigh comes in six infused spice blends, served with garlic-dill pickles, Cajun aioli and chow-chow on the side, and special for holidays.

It’s been a minute since JAM Hot Chicken moved into its cute little corner in Winter Park, bringing this charming corner of New England Avenue closer and closer to a meltdown, but people are still flocking in search of the rainbow of hot offerings from chef/owner Andrew Scala. which I would recommend having a carton of milk nearby (Scala sells it).

A recent visit from hot chicken legend Aqui Hines of Nashville’s 400 Degrees Hot Chicken (her own tribute to Prince’s Hot Chicken) was an honor that Scala is still processing. But in the meantime, he’s teaming up with Orlando’s own legends — the pizzaiolos of Lazy Moon — for a one-night collaboration on March 29 at Lazy Moon’s Mills 50 location at 1011 E. Colonial Drive in Orlando.

Slices of The What (yes, that’s the name) include whipped ricotta with jot dip, fries, JAM Hot mild chicken, vinny slaw, pickles and comeback sauce. They only make 200 pies and they start selling at 5pm, so come early, grab a beer or soda (pizza and soda: a love match for the ages) and take part in this once-in-a-lifetime coming together of two Orlando-area titans.

And hey, you can still visit JAM Hot for all kinds of traditional Nashville hot love.

Very untraditional, but plenty of Mexican fun can be found on deck at Bubbakoo’s, where shredded chicken meets the fiery essence of ghost peppers. Compensating for the heat: tender rice and warm tortilla, melting cheese, spicy-sweet salsa and a cooling crunch from the lettuce and tomato. A reminder that while this successful New Jersey-founded franchise has more than 100 locations in 15 states, each is independently owned and operated. The Metro has three locations: Celebration, Sand Lake and Lake Mary.

Owner AJ Haines has been taking hot chicken all over the South because it’s fun to try different versions of the nostalgic Nashville classic.

“Celebrating it is easy because it hits so many taste receptors in the mouth, creating its own kind of umami: heat, crunch, sour from the pickles, creamy sauce and a blend of spices,” he says. “Something about that heat and crunch keeps you going back for bite after bite.”

Hen&Hog’s three-day brined fried chicken thigh comes in six infused spice blends, served with garlic-dill pickles, Cajun aioli and chow-chow on the side, “to add at your discretion,” says Haines.

Moreover, it is special for the holidays. Saturday only, buy two for $20.

The soft handhelds at King Bao are monarch-level tasty, whether they stick to tradition or not.

“The hot chicken bao is our version of the Nashville Hot Chicken,” says owner Victor Mguyen. “We wanted to put an Asian twist on this amazing dish.”

Kimchi marinade keeps the fried chicken moist, with most of the kick provided by a smothering of homemade gochujang hot sauce. Topped with sweet hot pickles and scallions, it’s a festive win.

I told you about the delights of Sanford’s Upsala Grocery in 2022, when I and a few others in the parking lot enjoyed some surprisingly good sandwiches (and just a small portion of their huge selection of craft beers), but the chefs behind that modest convenience -store counters have not rested on their creative laurels. And of the newer treats they’ve added since my visit, the Bazooka Sandwich checks out the hot chicken box.

“This sandwich isn’t just spicy,” says supermarket owner Jay Patel. “It’s the kind of spicy that makes your taste buds throw a party and your mouth do a happy dance. One bite and you’ll feel like you’ve been transported to flavor city on a rocket powered by jalapeños and sass.

Did we mention he’s quite the hype man?

This hot chicken (fried crispy with gochujang chili paste, fresh cilantro, and jalapeno, lime, and ranch) “is so cool, it’s like a polar bear wearing sunglasses in a snowstorm.”

He doesn’t dive into the beer cooler. Actually, he’s exactly like that. But if you plan to eat this sandwich, ask for a hearty combination. Their stock of crafts – beer, cider, more – is excellent.

Do you like hot chicken, do you hold the chicken? Winter Park Biscuit Company has your plant-based jones covered with not one, but two spicy options to quench your thirst. The Death Valley takes their original Crispy Chik sandwich up a few notches with dry rub, while the Spicy Gator does the wetter work.

“Both are spicy,” says chef/owner Mary Westfall, “but not Nashville hot.”

Everthing okay. Some like it hot, others like it a touch.
